Menu Monday!

Today, I'm linking up with Rachel for a lil Menu Monday action!


Here's what I've been cooking up lately....



It was ok, but a little bland....I think if I make it again, I'll either use hotter salsa (I used medium) or just add some hot sauce, plus whatever other spices Travis thinks it needs (that's his job).



This was really easy and yummy! I used the leftover tortillas from the above salsa chicken to make tortilla strips on my new microwave chip maker that my mother-in-law got me for Christmas! Love that thing!!!

(my crock pot has been getting a lot of use haha)


This was amazing! It was a little bit like stuffed peppers (minus the pepper, obvi), but the cilantro made it super yummy!



This was also delicious, but I think if I made it again, I would cut the shrimp into smaller pieces! Everything kept falling off and I ended up eating most of the toppings with a fork!

Confessional Friday

It's been a while since I did one of these, but I'm home early from school (!!!!!), so I'm linking up with  A Blonde Ambition for Confessional Friday!

I confess...

-I am SO glad we didn't have a snow day, but instead an early release day! Snow days we have to make up (BOOOOO!) but early release we don't! We dismissed at 12:45 and it.was.GLORIOUS. I was home and pounding out miles on my treadmill before 2PM. I think this should be a weekly thing. PS-The roads are fine

-I was a teensy bit excited to use my massive ice scraper to get the ice off my car! That thing never gets used, I feel bad for it! It was like I was back in Ohio...hahah! Now, I don't need to use it for at least another 3-4 years. 

-I really need to clean my house...it is disgusting. But instead, I sit here and write this. 



-I am actually a little excited to go to a training for Girls on the Run tomorrow! I got chosen as one of the coaches by my principal (guess that's what happens when they find out you're a crazy runner!) and I am actually looking forward to coaching 15 girls at my school!


-I still have the bag of candy from my 26 acts sitting in my car for the next homeless person I see! I haven't seen any (on my side of the road, anyway)!

-I just ate an entire bag of popcorn (at least it was something kinda healthy) this afternoon....maybe early dismissal wouldn't be a good idea on a regular basis.

What's Been Going On...

Ohhhh HEYYYY friends...I'm just over here enjoying my FOUR DAY WEEKEND. No big deal. Thanks MLK for the day off yesterday, and sweet optional teacher workday today (which I obviously opted out of!)! Every week should be like this! 

Things are still pretty low key around here, which is amazing, but we did manage do some exciting things over the weekend....

First of all, did I mention that I LOVE being able to avoid the crowds at the gym with my new treadmill! I can't remember if I mentioned it on here or not, but if you follow me on Instagram {fergmindy}, you know that Travis and I recently got this guy, and we love it!!! 


Anyways.... Friday night, we went out to dinner with some of our friends at Heist Brewery for Restaurant Week! In case you are not from Charlotte, it's where a bunch of restaurants have a special menu...3 courses for $30! Although, this might not have been the best place to go for Restaurant Week, because we all just ordered off the regular menu! 

I got a yummy balsamic flatbread...(and a strawberry beer! It was super yum!)


And Travis has some sort of burger (surprise!) that he said was delicious.


Then because we are pigs, we went to Capital Grille for dessert! Trav and I split this amazing hazelnut chocolate cake....oh my goodness, IT.WAS.AMAZING.


I hope they do take-out there, because next time I am craving chocolate (PMS or otherwise), I am sending Travis to go get this cake for me!!!

Saturday was boring; I babysat and worked on report cards. BLAH.

Sunday, we went to church, and I went to the mall to get more makeup from Sephora. WOOHOO.
When I came home, I found out my cousin (#1 out of the 4 that are pregnant, in case you are keeping track) had her baby!

Here is baby Harper...how presh is she?!?!?!


Yesterday, we went furniture shopping and bought a new couch!!! 


I always wanted a white couch, but was nervous with my messy husband and kiddos in the future...luckily, on this one, you can take all of the covers off and wash them! So YAY!

So, now here is our family room...


We were going to get a matching loveseat, but we wanted to see how this looked with the old leather loveseat first....and I am not a fan. I think we either need to get a matching white loveseat, or maybe a big chair?? What do you think?

I also don't know what to do about pillows....I loathe those red ones! Here's another picture of the couch without pillows....


What color pillows should I do? And what about curtains?!?!? Any decorating tips would be appreciated...I am not good at this stuff!!!

Quick Trip to Florida!

Annnnndd I'm back to being a terrible blogger. 
Its probably because my life has been pretty boring lately, which is a-ok with me! Since I last blogged, I've found out that about 947267463 more people I know are expecting this year (okay, really like 4) and also got a new student, who is a JOY {sarcasm}. Neither of which deserves its own blog post....sorry. 

So, I am going back to a month ago (gosh, that's embarrassing) to when we went to Florida! My brother was getting his Master's degree, and I thought it would be the perfect excuse for a weekend trip!

First off, what would a trip be without standard shots in the airport? I mean, obviously.

The next day, we woke up to this!



We headed over to my brother's house to see his sweet dog Luna!!! (And I guess my brother, too)

Hahah, it took pretty much my entire family to get Peter dressed...we all have Master's degrees, but no one could remember how to put on what! 


He made it! Sweet face...

And of course, in typical Peter fashion, nothing can be easy, so of course he lined up with the WRONG MAJOR so we had NO clue why his name didn't get called when it was supposed to! Honestly....at least he got his degree.


And then, the standard family photo shoot outside afterwards...




This would be cute if it were just my brother's gf and I....both boys are making the worst faces ever.

After the ceremony and photo shoot, we went to a super fancy restaurant on the water!



I got lobster mac & cheese...it was super yum.


Even the sinks were fancy! 


The next day (which happened to be our 6 month wedding anniversary...how did that go by so fast?!) we flew home to freezing Charlotte! It was a quick weekend but so much fun!

Congrats Peter! I hope you don't hate me for taking a month to post this...because I know you check my blog alllll the time. HA!

And, hopefully, I can come up with something else exciting to write about, so it's not another 12 days before you hear from me again!

Saw it. Pinned it. Did it. {sappy picture frame}

A little over a week ago, I gave my dad a sweet, sweet present for Christmas, inspired by none other than a pin on Pinterest:


I saw this frame and knew I had to give it to my dad!! Unfortunately, when I looked on Etsy, I realized that thing was $60!! Call me cheap, but I am NOT paying $60 for a picture frame!! I figured I could make it myself! 

So I am linking up with Beautiful Mess for Saw it. Did it. Pinned it. to show you how it's done!

1. Gather supplies. I bought a wood plaque, wood frame (that I didn't end up using), acrylic paint, foam brushes and letter stickers. I also used some acrylic sealer that I already had.
{Please excuse the phone pics....yet again, this girl was too lazy to get out the real camera! New year's resolution, perhaps?!}

2. Paint the wood plaque with a foam brush. I decided Carolina blue, because it's kinda my fav :)

3. After the paint is dry (I did 3 coats), cut apart each letter sticker and lay them out how you want them.

4. Stick each letter down. I used a piece of paper as a guide to make sure the letters were in {somewhat} of a straight line. I realize it's not perfect, but I tried really hard!

5. After the letters are down, I used the acrylic sealer and sprayed it lightly over the whole piece, so the stickers wouldn't peel up.

6. I decided the ghetto wood picture frame looked a little too crappy for me, so I ran out to the store and bought a simple silver 4x6' frame instead.
I put the pic of my dad walking me down the aisle in it (duh), and then, I hot glue gunned the sh*t out of that frame!

And viola! DONE!


A Christmas present to make your dad cry!!!


Simple, simple, simple. Less than $60. Definitely doing this again!
